IT’S VALENTINE’S DAY!!! Today of all days you should surround yourself with the one you love most and have a fun-filled day eating all the food and enjoying whatever it is you have planned.
Today I thought I would share a recipe I found on BBC.GOOD.FOOD. I have changed it up a bit by adding some of my own little touches but I can ensure you that it still tastes delicious. This strawberry cheesecake fits perfectly with today’s theme and tastes delicious.
- 250g digestive biscuits
- 100g butter, melted
- 1 tsp Vanilla extract
- 600g cream cheese
- 100g icing sugar
- 284ml pot of double cream
For the topping
- 400g strawberries
- 25g chocolate, melted
- To make the base, butter a loose-bottomed tin before Putting the digestive biscuits in a plastic food bag and crushing to crumbs using a rolling-pin. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. All to chill in the fridge for 1 hr to set firmly.
- Place the cream cheese, icing sugar and the vanilla essence in a bowl, then beat with an electric mix or a self stand mixer until smooth. Tip in the double cream and continue beating until the mixture is completely combined. Now pour the cream mixture onto the biscuit base, making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon. Leave to set in the fridge for an hour.
- Now that your cheesecake is made, its time to decorate. My favourite bit. Start by placing the strawberries in the centre of the cheesecake, working your way out. You can now leave it like this or you could add strawberry sauce, chocolate etc. I went for the chocolate because, who doesn’t lie chocolate ?
